Crockpot Chicken Marinara

So simple, so easy, but with tons of flavor and versatility.

Serves: 8 Total Cook and Prep Time: 6 hours 20 minutes

Ingredients

  • 3 chicken breasts
  • 1 jar marinara sauce of choice
  • 2 tablespoons tomato paste
  • half a cup of water or chicken broth
  • 2 tablespoons of minced garlic
  • 2 tablespoons Italian seasoning
  • 1 tablespoon salt
  • 1 tablespoon pepper
  • 1 box pasta (shape of choice)
  • Parm or mozzarella cheese to top

Instructions

  1. Start by seasoning your chicken on both sides with salt and pepper to taste
  2. Add the chicken to the crockpot then add the minced garlic, covering the chicken
  3. Add the marinara sauce, the tomato paste, chicken broth (or water), and Italian seasoning
  4. Stir to slightly combine
  5. Set the crockpot to Low for 6 hours
  6. After 5 hours, start to break up and shred the chicken
  7. Once ready to serve, cook the pasta (instructions on box)
  8. Stir and continue to shred and break up the chicken in the crockpot
  9. Serve the chicken marinara on top of the pasta, and top with either parmesan or mozzarella cheese (or both!)

Seasonings and sauce I used for the recipe. The Badia minced garlic is one of the best you can find. The Morton and Basil Italian Herb blend is the only Italian seasoning I’ll ever use! Costco marinara sauce is also a great band for your buck.

I used defrosted chicken tenders for the recipe instead of chicken breast, since it was what I had on hand.

My favorite thing about chicken in the crockpot is how easily it shreds. I never have to worry about the chicken being under cooked. And yes, I’m in the market for a new crockpot. Once I find the right fit, I’ll post a new crockpot review!
